Cherry Chocolate Muffins
A delicious moist muffin studded with cherries and chocolate. Makes 6 large muffins or 8-12 smaller ones.
- 2 c Self Raising Flour
- 1⁄2 c Sugar
- 100 Sunflower oil or melted butter
- 2 Organic Free Range Eggs
- 1 c Milk
- 1 c Pitted Cherries, halved.
- 1⁄2 c Dark Chocolate, roughly chopped
In a large mixing bowl combine dry ingredients. In a small bowl, lightly beat the eggs. Make a well in the center of the dry ingredients, and add the egg along with the milk and oil. Mix til just combined and then carefully fold in the cherries and chocolate. (Avoid over mixing as this will make the muffins less soft)
Spoon into well greased muffin tins or paper cups, and bake for 20-23 mintues at 200°C.

Notes
* If you prefer to use wholemeal flour, or a combination, add to the mixture a pinch of baking soda, and warm the milk slightly before combining.
*cherries may be substituted for any fruit you like; try mango, peach, plum apricot, apple...
