Quick Grated Daikon and Carrot Salad
Daikon is revered in Japan for its many medicinal uses, being especially helpful in the digestion of oily foods.
This salad is good for its crunchy texture and Asian flavour. Quick and easy, and makes daikon seem really yummy (which it is!).
- 4 shiitake mushrooms (soaked, stems removed and sliced)
- 1 medium carrot
- 1 medium daikon
- 1⁄2 c Fresh corriander
- 1⁄4 of a strip of kombu (about of 10cm)
- 2 T sesame seeds
- 1 T Toasted Sesame Oil
- 1 T tamari
- 2 T brown rice vinegar1
- 1 t Mirin

simmer the kombu in water that just covers it for 20 minutes (keep the water)

dry roast the sesame seeds with a pinch of salt

make up the dressing from the sesame oil, tamari, brown rice vinegar and mirin

grate the daikon and carrot and place in the serving bowl

add the slices of shiitake, sesame seeds and coriander

thinly slice the kombu and add to the salad

add the dressing, if required to go further, add some stock water from the kombu
