Cleansing Salad
This bright zingy salad has a powerful, cleansing effect on the body. The beetroot is great for the intestines, and the daikon is excellent for cleansing the body of excess fat and toxins. And the carrots, well, we all know carrots are good for us, they are great for the liver and a great antidote to constipation. But best of all, it is a juicy, yummy salad!
- 1 medium organic beetroot
- 1 medium organic carrot
- 1⁄2 Organic Daikon
- 1⁄4 c Organic sunflower seeds
- Dash of Organic Tamari
- 1 t Organic Brown Rice Vinegar
Grate beetroot, daikon and carrot, and place together in a serving bowl. Toast the seeds in a dry frypan over a low heat, stirring til they start to smell good. Add a splash of tamari and stir to coat them, then immediately take off heat and tip the seeds onto a plate to stop cooking.
Sprinkle the vinegar over the veges then mix through with the seeds and serve.
Notes
If you want to preserve the wonderful colours of this salad, place the grated ingredients in the bowl but do not mix them together til just before serving. The beetroot is so dominant, it will colour the others as they sit.
