Apple Sesame Salad
A crunchy salad, good as a side to Middle Eastern style dishes, or as a light lunch.
- 300 g Organic Carrots
- 150 g Organic Radishes
- 2 Organic Apples*
- 1 Handful Organic Sultanas
- 1⁄2 bn Organic Parsley
- 1⁄2 bn Organic Corriander
- 4 T Organic Apple Cider Vinegar
- 8 T Organic Olive Oil
- 1 T Organic Tahini
- 2 T Organic Sesame Seeds
Toast sesame seeds (without oil)in a heavy pan, stir constantly with a woodenspoon to ensure they don't burn. Remove from heat when they are golden in colour and set aside. Wash carrots then chop into thin flat slices legnthways, then cut into matchstick sized pieces. Finely slice the radishes. Quarter the apples, remove the cores, then finely slice. Place carrot radish and apple into a bowl, and mix through the rest of the ingredients, apart from the sesame seeds. Add salt to taste, then serve on a large flat bowl, sprinkling the sesame seeds over the top.
