This has the consistency of a soft serve ice-cream, but it is made with just a few ingredients and takes just a few minutes. (no dairy, sugar, nuts or gluten)
Place all ingredients into a blender and blend until thick and creamy. You need to scrape down the sides a couple of times until the mixture comes together into a soft soft serve consistency.
Serve Immediately! If you've made too much, return to the freezer in an airtight container, and simply defrost for a few minutes at room temperature, then blend again til smooth.
