Quinoa Burgers

Super Delicious Burgers. Quinoa offers a unique source of complete protein, making these burgers a nutritious vegetarian meal in themselves.

  • 1⁄2 c Organic Quinoa
  • 1 cn Organic Kidney Beans
  • 1 Organic Corn Cob
  • 300 g Organc Jap Pumpkin
  • 1 Organic Egg
  • 1 c Water
  • 1⁄4 c Quinoa Flour (or other flour)
  • 1⁄2 t Smoked or Sweet Paprika
  • Organic Oil, suitable for frying*

Peel the pumpkin and roast or steam until soft. Rinse the quinoa thoroughly to remove the saponin coating. Put in a pot with the water and bring to the boil, then boil gently for 10-12 minute (with the lid on the pot).

Drain the kidney beans, remove the corn from the cob and place in a bowl with the cooked pumpkin and quinoa. Mash together with a large fork or masher.  Add paprika, salt, pepper and the egg and mix well. Now mix through the maize meal. Heat a large heavy based pan with a good tablespoon of oil.

Form the mixture into small patties and drop in the oil. Flatten with a spatula and fry on each side for a couple of minutes.

Serve with cream cheese and rocket or in wraps with salad.
